Crunchy Thai Slaw with Sweet & Spicy Peanut Sauce

In the south, we have Cole slaw with everything from burgers to BBQ and let me just tell you...the classic mayo based Cole slaw with limp cabbage mix is just boring and gross. I said it. Anyone who loves food and flavor might agree! Let me un-borify that dish and give you a version that is full in flavor, texture, and kick!
My crunchy Thai slaw with a spicy peanut dressing is sure to hit your tastebuds!
Inspired by Thai flavors like ginger, peanuts, green onion, miso, and more--this dish would be a solid side dish to any Asian fusion meal. You can top this crispy slaw over a burger, a taco, or pair with some tofu and rice noodles and be well on your way to a delicious meal!
The magic is really in the spicy peanut dressing and fresh ingredients so don't skip on quality ingredients here!

Crunchy Thai Slaw with Spicy Peanut Sauce
Check products with links to my favorite brands! This salad is best when it gets to sit in the dressing for at least 30 minutes and gets better the next day.
Crunchy Cabbage Mix
4 cups of shredded cabbage (1 small head sliced and rough chopped)
1 Cup Green Onion, chopped (about 6 green onions)
1/2 cup shredded carrots
1/4 Cup chopped cilantro (plus more for garnish)
1/4 Cup Peanuts (chopped)
**OPTIONAL ADDITIONS: 1bell pepper diced and a handful of bean sprouts
Spicy Peanut Sauce
This sauce recipe makes extra and I highly recommend you make the full recipe, use 1/2 on the salad and use the rest as needed for dressing other foods throughout the week!
Ingredients
1/2 Cup Natural Peanut Butter (with oil on top gently stirred in--the oil is the emulsifier in this recipe)
1tbsp Miso Paste
1/2 Cup Coco Aminos (I used the classic sriracha flavor for heat, my second favorite flavor would be gingery lime*)
5 Tbsp Apple Cider Vinegar (or Rice Wine vinegar--I use ACV to keep reduce the amount of added sugar in this recipe).
1tsp Sriracha (or chili garlic paste)**Use only if you like extra heat or are not using the sriracha flavored coco aminos
2tsp Fresh Grated Ginger
1tsp Toasted Sesame Oil
Pinch of Salt
Directions
Prep all of your vegetables. Start by washing cabbage and slicing it accros the cabbage and chopping each slice into smaller bites.
Chop green onions and cilantro, reserve a small handful of each for garnish.
In a medium bowl, mix cabbage, carrots, green onion, and cilantro. Add red bell pepper and bean sprouts if using.
Now in a separate bowl or mason jar make the spicy peanut sauce. Combine all ingredients and whisk or shake (with the lid) if using a mason jar.
Assemble and Serve
Dress the vegetables with 1/2 of your dressing to start and add more if you prefer. Reserve the remaining sauce for whatever you like or for drizzling on top of your desired entree.
Garnish with chopped peanuts, cilantro, and green onion. Drizzle with more sesame oil if desired.
Serve along side any Asian style main dish like thai lettuce wraps. Make it a main dish by adding rice noodles and crispy tofu or the protein of your choice!
